Bean Salad

I saw this recipe on this blog. It looks so good I had to make it.  It makes a nice summer side dish.  I’ve included the recipe below with my changes.

Bean Salad

makes 6 servings – about 3/4 cup or  4.5 oz

2 cups (10 oz) cucumbers, halved and sliced
1 cup (5 oz) grape tomatoes, halved
1 14 oz can white beans, drained and rinsed
1 Tbs garlic, minced
2 Tbs olive oil
1/4 cup red wine vinegar
salt, to taste
black pepper, to taste

Add everything to large bowl; sprinkle with salt and pepper. Toss together.  Refrigerate and serve chilled.

  • Aw, this was a really nice post. In thought I want to put in writing like this additionally – taking time and precise effort to make an excellent article… however what can I say… I procrastinate alot and by no means appear to get one thing done.
